Grilled Zucchini with Garlic & Lemon Butter Baste
4 medium zucchini, trimmed, halved lengthwise
113 grams butter
Juice from one lemon
5 milliliters freshly ground black pepper
5 milliliters garlic powder
5 milliliters dried oregano
1 milliliter curry powder
59 milliliters grated Parmesan cheese (optional)
Preheat barbecue with medium heat.
Score cut side of zucchini halves diagonally about .6 centimeter deep at 2.54 centimeter intervals. Melt butter with lemon juice, pepper, garlic powder, oregano, and curry powder in heavy small saucepan. Brush seasoned butter on cut side of zucchini.
Place zucchini on grill and cook until charred on all sides and just beginning to soften, about 2-3 minutes per side. If desired, arrange zucchini on grill, cut side up and sprinkle with cheese, close lid and cook until cheese just softens, about one minute. Transfer to platter and serve.
